I made two ginger bugs about a month ago. In one I used white processed sugar and for the other I used sugar in the raw. I then made two batches of soda using the different bugs. For batch 1 I fermented store bought 100% mango juice. For batch 2 I used 3:1 pomegranate juice to sweet tea. The sugar in the raw bug fermented about twice as fast with a significant amount of fizz. Took about 24 hours from bottling to drinkable. The processed sugar ferments took about 45 ish hours but had less fizz overall. The taste was delicious for both though.
The sugar in the raw bug has been thriving and has happily been making numerous sodas for me over the last few weeks. I add about 1-2 ounces per bottle of juice and then top up the bug with sugar and water to keep it going.
So far the only failure has been trying to ferment 100% organic lemonade. After 50 hours of zero carbonation produced I tossed it. Probably too much acid for the yeasts to handle :/

That method of using wild yeast to create a ginger bug is a bit of a lottery. You might end up with a very tasty ginger beer, you might get some off flavors. I personally like to start with commercial yeast and start a culture with low levels of ginger as the amount I’d use in ginger beer can kill or stunt normal yeast. Give it few days to ferment then add some more grated ginger and sugar and repeat. You are essentially doing some selective breeding of the yeast to get a strain that can handle the ginger’s antimicrobial properties. After a few repetitions you should have a good ginger bug that is a fairly clean yeast that can ferment ginger beer well. You can maintain the ginger bug separately like this or put your ginger beer in the fridge before drinking which causes the yeast to drop down to the bottom which you can use for the next batch. I find adding a few cloves to the mix improves the flavor.
